January 7th 2012

Breakfast: 2 cups of coffee with zero calorie sweetener and a bowl of Cheerios with almond milk.

Lunch: Quina pasta with vegetable sauce.

Snack: 2 piece dark chocolate 70% cacao

Dinner: 2 slices pizza

Dessert: dessert pizza!!!!!

January 6th 2012

Breakfast: I ate a bowl of cheerios with almond milk and drank a cup of coffee with zero calorie sweetener.

Lunch: I ate a bowl o the leftover brown rice pasta, green vegetable sauce topped with tomatoes and a slice of whole wheat bread with Smart Balance spread.

Snack: A piece of Trader Joes while grain brownie and a piece of dark chocolate 70% cacao with a small glass of milk.

Dinner: I kind of ate dinner twice. I ate before date night with my hubby because we weren't sure if we were going o get dinner. And the I ate again when we got to Seattle. So before I had a few pieces of the raspberry walnut marinated chicken breast and an egg roll. Then at the restaurant, TASTE in the Seattle Art Museum, I started with a spoon of carrot top purée and has the Winter Squash Ravioli with brown butter, fried sage, and creme fraiche and drank water with lemon.

Dessert: When we got home I splurged...3 graham crackers, 1/2 a whole wheat brownie and a glass of milk.

Breakfast: Egg white egg scramble topped with the green veggie sauce I made last night and fresh diced tomatoes. I also ate a piece of white toast(I've go to make some whole wheat bread today!) with Smart Balance spread.
I drank a cup of coffee with zero calorie sweetener.
***Well, this is where the accountability comes into play. I need to fess up. Shelby ended up eating her eggs and some of mine but didn't eat her toast. So I ate ANOTHER piece of white bread which equals SUGAR. Why? Because I'm weak and I "wanted it". Also, I hate wastefulness which is ridiculous. If there's chocolate cake left over from a party you would do your health, body, and sanity better if you just throw it away.
Now I'm going to continue with my day and do better.

Morning Drink-I've been trying to drink lots of water. Today I added some lemon. Shelby took a sip and said, "yummy water!".

Lunch: 1 bowl of the leftover pasta and vegetable sauce from last night. And I drank a glass of berry tea with no calorie sweetener.

Snack: 1 glass on 1% milk and 1 tortilla with Smart Balance spread and light agave nectar.

Dinner: I had a chicken breast marinated with low fat raspberry, walnut vinaigrette and 1/2C lightly sautéed collard greens.

Exercise: 1hour dance exercise class Boy was I sweating!

Dessert: 1 Trader Joes whole grain brownie and 2 pieces of dark 60% cacao chocolate and a cup of 1% milk.

Breakfast: I ate one bowl of Trader Joe's Whole Grain Farina made with water to save on calories. Topped with 2 diced apricots, 1tbs dried cranberries, 1tsp butter, and 1tsb cinnamon, brown sugar, and pecan mixture.
I drank 1 cup of coffee with zero calorie sweetener.

Snack: I ate about 8 Trader Joe's dehydrated unsweetened apple slices.

Lunch: A large bowl of the broccoli soup, a slice of buttered toast and a glass of berry tea with 1tsp no-calorie sweetener.

Snack: Trader Joes plantain chips

Dinner: I sautéed onions and garlic in olive oil. Then I added kale, collard greens, mushrooms, baby spinach, 1tbs basil pesto, 1tbs Parmesan cheese, and veggie stock. Then I blended it all up and served it over brown rice pasta and topped it with diced tomatoes. It was soooo filling and good!
I ate one large bowl and a glass of wine.
Lastly, I drank the darn apple cider vinegar. Yuck! I'm hoping I get used to it.

Dessert: 1 Trader Joes whole grain brownie and a small glass of 1% milk.

Late night snack: 2 pieces of dark chocolate cacao....the good stuff!

Homemade broccoli soup

I sautéed one onion in olive oil. Then made a rouge with 1TBS butter and 2TBS white flour. I added one carton of low sodium vegetable stock. Than I added in 2 heads of chopped broccoli and let it simmer 20 minutes. Then I creamed it up in the blender.

I ate 1 large bowl topped with a sprinkle of Parmesan cheese. I also ate 1 slice of white bread with butter.

To drink I had one glass of berry tea with 1tsp of no-calorie sweetener.
